Mother Bacon’s Corn Fritters

Joe Bacon’s Mom would make Corn Fritters with Jiffy Mix

1 pkg. “JIFFY” Vegetarian Corn Muffin Mix or 1 pkg. “JIFFY” Corn Muffin Mix
2 eggs
1 can (8¾ oz) whole kernel corn, drained
1/4 cup sour cream
1/4 tsp. pepper
1/8 tsp. salt
oil for frying

Step 1
Preheat 1” of oil in deep fryer or skillet to 350°F.
Step 2
Beat eggs. Add remaining ingredients. Stir until blended.
Step 3
Drop by tablespoon into deep fryer or skillet. Fry 1 – 2 minutes on each side or until golden brown.
Step 4
Remove and drain on paper towel.
