Ribs & Rings

They had some enormous onions last time we shopped, I grabbed a couple. These rings are a result, they are batter dipped and then dredged in panko. They turned out well. The ribs could have used more time in the oven but they were OK as they were.

They made for some decent leftovers: I chopped the meat the next day for sammiches and rewarmed the rings in the air fryer.
