With plenty of my fave chili oil!
Not my best effort but it’ll do.
I forgot the scrambled egg but I did remember to add a spoonful of chili oil. I’ve seen several mentions in articles that the Lo Gan Ma (Old Godmother) brand is the best for chili oil. I can attest that it is delicious, even addictive. The peanuts were a surprise.
It’s a smoked pork fried rice because I had some leftover. Not quite enough to suit me so I added diced ham that seems to have disappeared into the mix, and a few scrambled eggs. Fried basmati rice with sausage, ham, peas, broccoli, and green onions in sweet chili garlic sauce. Lots of grated ginger and garlic with the oil for this one. Should be great with diced chicken, too.
I always end up adding too much sauce to this stuff. This dish has oyster sauce, sweet chili sauce, and soy sauce.
Fried rice is one of the easiest things, but be sure to use older rice that has dried out some.
