Dinner Menu: Chicken Primavera and Fruity Carrot Cake

I love a quick and easy meal that looks and tastes like it took much longer. This menu sure qualifies. Lots of fresh vegetables and if you want to really amp up the flavor, use a flavored linguine, either from a local source (farmer’s markets usually have them) or the gourmet section of the market. A lemon pepper pasta is really good with this. For the vegetables, I’d go with whatever you favor and is fresh, think of the list below as a suggestion. Maybe add mushrooms, artichoke hearts, fresh spring peas.

The carrot cake is not what you’d expect, it is a fruity, light confection with a definite spring touch.  A favorite when I’m taking birthday cake requests.

Meanwhile, on the board tonight:

Chicken Primavera

  • 3 boneless chicken breasts, cubed in large pieces
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 to 2 tbsp olive oil
  • 8 oz sliced carrots
  • 8 oz broccoli crowns
  • 1 small yellow summer squash, sliced
  • 2 tsp basil, crushed or ¼ cup fresh basil leaves
  • 1 tsp crushed garlic
  • 2 Roma tomatoes, quartered
  • ¾ cup chicken broth or equivalent
  • ¼ cup white wine
  • 2 oz grated parmesan
  • 9 oz fresh linguine

skillet, large saucepan

Sprinkle salt & pepper over chicken pieces. Heat oil in skillet, add chicken and saute for 5 minutes over medium-high heat, until golden on all sides. Add carrots, broccoli and squash, and stir for 2 minutes. Add basil, garlic, tomatoes. Stir additional 2 minutes. Remove mixture to bowl. Add chicken broth and wine to skillet, deglaze drippings, bring to a boil, reduce heat, add chicken mixture, toss and cover. Reduce heat to low and let simmer while pasta cooks. Bring water to boil in saucepan and cook pasta according to package directions. Drain very well and toss with chicken mixture. Sprinkle with parmesan and serve.

Carrot Cake

  • 1 cup grated carrots
  • 1 cup unbleached flour
  • 2/3 cup white sugar
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 tsp ground cinnamon
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 8 ounce can crushed pineapple
  • 1/4 cup chopped pecans

Frosting:

  • 1 cup confectioners’ sugar*
  • 8 oz cream cheese
  • 3 tbsp butter, melted
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped pecans

2 bowls, 8×8 baking dish, well greased

Preheat oven to 350°

In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Stir in egg, oil, vanilla, pineapple and pecans. Spoon batter into prepared pan.

Bake for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Frosting: In a medium bowl, combine all ingredients, except nuts. Beat until smooth. Spread on cooled cake and garnish with pecans.

* I use half of the sugar because I don’t like it quite that sweet.

Dinner Menu: Spicy Potato Soup and Gooey Chocolate Treat

Spicy Potato Soup_Snap2Well, in parts of the Front Range there was 10 inches of snow. Here…rain. Bixby was disappointed but I was not. Still cold enough to keep the soups going.

I rifled through my files and decided on another soup for the dinner menu this week:

When the cold weather hits, it is great to hunker down with some hot soup, buttery biscuits and finish with some melt-in-your-mouth cake warm from the oven. This is my go-to potato soup, over the traditional cream of potato soup; I like the spiciness and the sautéed onions add a deep, rich flavor. The garlic biscuits are a nice complement to the soup. I was going to find a healthy dessert for tonight, but then thought to heck with it, it’s cold and we need chocolate.  Rich, gooey, chocolaty goodness.

Spicy Potato Soup

  • 1/4 cup butter
  • 1 yellow onion, diced
  • 2 celery stalks, chopped
  • 1/2 tsp salt
  • 1/4 tsp cayenne
  • ½ lb spicy ground sausage, browned and drained
  • ¼ tsp crushed red pepper (opt)
  • 1 bay leaf (remove before serving)
  • 1 tsp crushed garlic
  • 16 oz chicken broth
  • 6 potatoes, well scrubbed, unpeeled and cubed
  • 4 cups milk
  • 4 tbsp flour
  • 8 oz shredded cheddar or jack

Melt the butter in a large saucepan over medium-high heat. Add the onions, celery, salt, and cayenne and cook, stirring, until the onions are soft and lightly golden, about five minutes. Add sausage, crushed red pepper, bay leaf, garlic, broth, & potatoes. Mix milk & flour, add. Bring to a boil for 1 minute, stirring constantly. Reduce heat to medium low, cover and let simmer, stirring occasionally for 30 minutes until potatoes are soft. If it’s too thick, add water. With a potato masher, slightly mash a few of the potatoes. Serve with cheese to garnish.

Garlic Biscuits

  • 2 cups flour
  • 4 tbsp buttermilk powder*
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1/2 tsp sugar
  • 1/3 cup butter or shortening
  • 3 tsp crushed garlic
  • 1 cup milk*

bowl and baking sheet or cast iron skillet, greased

I prefer using butter over shortening because it gives the biscuits a buttery, garlic flavor that is irresistible.

Sift together dry ingredients. Cut in butter, stir in garlic, add milk. Stir quickly with a fork until completely moistened, don’t over mix. Knead gently on floured surface for 10-12 strokes. Roll out to ½ inch thick, cut into biscuits. Place on baking sheet or cast iron skillet, and bake at 450° for 10-12 minutes, until golden brown.

*or substitute 1 cup buttermilk,  then omitting buttermilk powder and milk.

Mocha Cake

  • 1 cup flour
  • ¾ cup sugar
  • ¼ cup unsweetened cocoa
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • 3 tbsp oil
  • 1 tsp vanilla

  • 1/3 cup sugar
  • 2 tbsp unsweetened cocoa
  • 1 cup very hot coffee**
  • 8×8 inch baking dish, lightly oiled

Preheat oven to 350°

This is a pudding style cake, so you don’t want to over bake it. You’ll serve it warm and directly from the pan. When you cut into it a thick, gooey chocolate center will be revealed.

From the top list: combine flour, sugar, cocoa, baking powder & salt. Combine milk, oil, & vanilla, mix well and add to flour mixture. Stir well. Pour batter into baking dish. From the bottom list: combine sugar & cocoa and sprinkle over batter. Pour hot coffee over batter – DO NOT stir. Bake for 30 minutes or until center springs back when touched, do not over bake.

** for a stronger coffee flavor, double the ground coffee to water ratio, or use espresso.

  • 1 yellow onion
  • 2 celery stalks
  • ½ lb spicy ground sausage
  • 16 oz chicken broth
  • 6 potatoes (russets work best)
  • 5-1/2 cups milk

  • 1/2 cup unsweetened cocoa
  • Coffee or espresso to make 1 strong cup

Chicken Dumplings

DSC_8372 (1600x1060)I found a frozen block of turkey broth while rummaging through the big box and dragged it out.  I added more broth and a few more chicken thighs, tossed in some veggies and a bag of dumplings that have been in the freezer since I can’t remember when.  It all simmered for a good while but the dumplings never did get quite right, they’ll be better tomorrow when they have had more time to soak.

A discussion came up on Balloon Juice about the benefits of cauliflower. Recipes got bantered about but this one made me salivate the most! My only contribution is formatting, otherwise full credit goes to Ruemara

Cauliflower Beer Cheese Soup

  • 1 med onion
  • 12 oz beer
  • 1 pint broth (chicken is preferred, but suit your taste)
  • 1 head cauliflower, cleaned & roughly chopped
  • 3 cloves garlic
  • 1 tsp salt-free seasoning
  • Salt & Black pepper to taste
  • 1/4 cup shredded cheddar cheese
  • 1/2 tsp smoked paprika

You start with sauteing onions in 1 tsp oil until translucent, add beer, broth ( I prefer chicken, since it’s clear) and all of a cleaned, roughly chopped head of cauliflower. Add garlic, salt free seasoning, and black pepper to taste. Once cauliflower is tender (about 10 minutes) turn off burner and use your handy, dandy immersion blender. Blend until smooth. Mix in cheddar shreds and smoked paprika. You can also go with smoke seasoning and tortula yeast for the cheez flavour. Stir. Salt to taste. Drink up. I think that’s what I did. It was good.

It’s Veteran’s Day, so I thought I’d post photos of two of my favorite veterans. Although they are not the only two, they are the two closest to my heart. The above photo is of my dad when he first enlisted. A career Air Force man, he served in Vietnam when I was quite young and his service took me on many adventures during my youth.

And my brother, who served in the National Guard and was stationed in Iraq/Kuwait during the Iraqi war.  So proud of both. Thanks to all who serve this country and the families that support them.

In recipe news, it was 60 degrees at noon today and by 3 pm it had dropped to a windy, cold 45 degrees, so soup seemed the best idea for the dinner menu tonight. I make several kinds of potato soups regularly, but spicy potato is by far my favorite.

Chicken Noodle Soup

DSC_6136 [1600x1200]It’s cloudy and rainy today and that put Mrs J into a soup mood.  I started chicken simmering with onions and then ransacked the cupboards for egg noodles and came up short.  I suggested the mung bean noodles I have stashed away but she refused them in favor of a run to town for “proper” noodles.  While she was gone I went ahead and fixed a bowl using them.  These are often called cellophane noodles and are huge in Asian cuisines.  I have garnished this bowl with fresh chilies and red onions.  There are a few shiitake mushroom slices in there, a splash of soy sauce, and a few drops of hot sesame oil along with the carrots and celery.

Cream of potato soup with cheese and smoked ham

This soup is very easy to make, just boil ham hocks in chicken stock until they are falling off the bone, remove them to cool.  Add diced potatoes to the hot stock and simmer until they are soft.  Make a roux in a separate pot and add heavy cream and stir until the sauce thickens, stir in cheese, add the cheese sauce to the potatoes and add the cut up ham back to the pot.  Cured hocks are salty so watch adding too much salt when seasoning.  Just about any cheese will work so long as it melts well in the cream sauce.  We used the rest of the cheese we had left over from the pasta dish last night, and added a little cheddar, too.  This is my new favorite soup.  LOL

Mmm…Corned Beef Platter

Here’s that corned beef I mentioned at lunchtime.  Not much to say about the recipe, plop it into a sauce pot and cover with broth.  Bring to a boil then reduce to a simmer, add the veggies toward the end.  I managed to overcook these a bit but they were still great tasting.  I like the whole grain Creole mustard on this.

The rye bread is still working, the recipe that caught my eye calls for 4 rises, each for a good bit.  Directions say to allow 8 hours to finish the bread.  I may shave a little off that time, but not that much.  Hope it turns out well.  Stay tuned.
