An easy and delicious dinner: Bagged frozen fries crisped up in the toaster oven, perfect sous vide steak in a drippings and butter pan sauce, and a classic wilted lettuce salad. That recipe has the dressing over iceberg lettuce but I’ve only ever had it on leaf lettuce, I’m minded to give it a try their way.
I wanted some shrimp tonight, Mrs J wanted them breaded and fried and served with cocktail sauce. OK by me. We made a simple batter, reputed to be what Red Lobster uses, I have no idea if that is true: 1 cup of flour, a beaten egg, 1/2 cup each of milk and oil, a dash of regular salt, and 3/4 t of seasoned salt. On a whim I added 1/4 c of corn meal and had to thin mine with a little more milk.
Some simple slaw and some frozen fries baked in a 450 oven rounded out the menu.
