Grilled Chicken and Papaya

I’m thinking I’ll focus on grilling recipes this week. Start with something a bit different with some exotic flavors.  Serve over rice or couscous and add some grilled vegetables for a quick and easy dinner.

Grilled Chicken & Papaya

  • 2 tbsp olive oil
  • 1 tbsp curry powder
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 boneless chicken breasts
  • 8 button mushrooms, washed
  • 1 onion, cut into 8 wedges
  • 1 green pepper, cut into 8 pieces
  • 1 papaya, peeled, seeded & cut into 8 chunks
  • 4 large metal skewers (if you use wooden, remember to soak them first)

Heat oil in skillet, add curry powder and stir for 30 seconds, remove from heat & add lemon juice, water, salt & pepper. Cut each breast into 4 to 6 cubes. Thread on skewers: (suggested) mushroom, chicken, onion, pepper, chicken, papaya, chicken, pepper, onion, chicken, papaya, mushroom. Brush curry mixture on all sides of the kabobs. Grill for 10-15 minutes, turning frequently and basting with curry mixture.

Really Quick Dinners: Pasta Rustica

Scrolling through my recipes looking for ones I pulled together by rummaging around the pantry, freezer and refrigerator and came up with this one. Quick, easy and versatile.

Pasta Rustica

  • 9 oz pkg. fresh linguine pasta
  • 4 Roma tomatoes
  • 1 green or red pepper
  • 4 green onions
  • ½ tbsp crushed garlic
  • 2 tsp dried basil
  • ½ cup olive oil
  • Optional: ¼ lb sliced pepperoni or ¼ lb cubed turkey

saucepan, large skillet

Fill saucepan with water and bring to a boil.

Chop tomatoes, pepper and green onions (use greens and whites).  Heat oil in skillet, add onions, garlic and pepper, sauté until onions are golden, careful not to let garlic burn.  Add pepperoni and turkey.  Let simmer on medium to low medium heat.

Add pasta to water while ingredients simmer in skillet.  Cook according to pkg. instructions.

Once pasta is al dente, add tomatoes to skillet, sauté 1-2 minutes. Using a slotted spoon or pasta spoon, transfer pasta to skillet, letting most of the water drain before transferring. There should be just enough water on the pasta to create a nice sauce. If it seems too dry, add a few spoonfuls of the pasta water. Stir and serve with grated Parmesan.



 

Grilled Lemon Salmon with Corn Pepper Relish

This is a great recipe and you can cook it on the grill or indoors in the oven.  Add baked potatoes or rice and fresh greens from the garden for a nice summer meal.  Serves 4.

Grilled Lemon Salmon:

  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 4 – 6 oz skinless salmon fillets

Add ingredients to bag and refrigerate 1 hour or overnight.  Grill on a clean, oiled grill or use a well oiled grilling pan, or broil in oven in a heavy skillet or broiler.  Cook for 4 minutes on each side, or until fish flakes easily.  Serve with relish.

Corn Pepper Relish:

  • 1 cup cooked corn (or canned, drained)
  • 4 green onions, chopped
  • ½ green pepper chopped
  • ½ red pepper chopped
  • ½ yellow pepper chopped
  • 1 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp chopped cilantro
  • 1 tbsp chopped jalapeno
  • salt & pepper to taste
  • ½ tsp crushed garlic

Combine all ingredients and let marinate while salmon cooks.  You can use the remaining peppers in a salad for your next dinner.



 

Grilled Sweet Peppers & Potatoes

I know I promised to start a series on basic cooking techniques this week, but as I will explain later in the summer, my work situation is changing rapidly so this week has been consumed with those changes. Thursday’s recipe exchange ingredient is going to be potatoes, so I’m getting the ball rolling tonight with foil wrapped grilled potatoes and sweet peppers. Absolutely one of my favorite grilled vegetable recipes.  Yummy. Now I’m going to have to go make some.

Grilled Sweet Peppers & Potatoes:

  • 1 sweet red pepper
  • 1 green pepper
  • 1 small yellow onion (opt. Vidalia or Walla Walla sweets if they’re in season)
  • 4 lg. red potatoes (peeling opt)
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • salt & pepper
  • foil

Seed peppers.  Slice peppers & onions into thin rings.  Slice potatoes into thin slices.  Tear 4 sheets of foil, large enough to hold ¼ of all ingredients and fold over.  Add ¼ of peppers, onions & potatoes to each sheet of foil.  Mix together vinegar, oil, salt & pepper, then drizzle over each serving.  Fold and seal foil.  Grill over medium heat (not directly over flame) for 20-30 minutes until potatoes are tender, flipping halfway through.

Dinner Menu: Mambo Italiano Edition

Spaghetti and Meatballs2

Going old school tonight.  I thought you may still have some zucchini and tomatoes that needed to be used up and this menu does both.  Growing up, spaghetti was a weekly occurrence.  I’m not sure where my mom learned to make it, because it is my dad’s half of the family that is Italian, but it was always a hit at our house.  Over the years we’ve all played with different variations, but this is pretty close to the original. Whether it was at a weekly family meal or the Christmas dinner at my Gram’s, this basic sauce ruled.  And the good thing is, it is simple to modify depending on your tastes.  If you want to spice things up, add 1/4 to 1/2 lb of spicy Italian sausage and reduce the ground beef by as much.

Quick, easy and freezes well, I usually make double so I have some on hand for quick dinners.  Trust me, you will never find any jar sauce in my house.  Ever.  If you’d like to have meatballs instead, recipe is here.

On the board tonight:

  1. Spaghetti w/Meat Sauce
  2. Zucchini Italiano
  3. Crusty Italian Bread
  4. Sherbet or even better, Gelato

Spaghetti w/Meat Sauce

  • 9 – 12 oz pasta of choice (I like angel hair for this recipe)
  • 1 tbsp olive oil
  • 1 green pepper
  • 1 small onion
  • 3 tsp. crushed garlic
  • 1 lb lean ground beef
  • 6 oz tomato paste
  • 3 tomatoes, diced (or 14 oz can diced tomatoes)
  • 15 oz can tomato sauce
  • 3 tsp dried basil, crushed*
  • 3 tsp dried oregano, crushed
  • 1 tsp rosemary, crushed
  • 1 carrot, finely grated or 1/2 tsp sugar (these reduce the acidity of the sauce and bring out the spices – trust me on this one)
  • Salt & pepper to taste

2 saucepans and large skillet

In skillet, heat oil, sauté pepper, onion, garlic.  Add hamburger and cook thoroughly.  Add tomato paste and 1 tsp ea of crushed basil, oregano and rosemary, mix well.   In saucepan, add remaining ingredients and bring to a low boil, reduce heat, add meat mixture and let simmer for 30 minutes.

Cook pasta according to directions, drain well and serve with sauce and Parmesan cheese.

Zucchini Italiano

  • 2 medium zucchini
  • 1 tbsp olive oil
  • 1 tsp crushed garlic
  • salt & pepper to taste
  • ½  tsp oregano, crushed
  • ½  tsp basil, crushed
  • 4 tbsp grated parmesan cheese

medium skillet

Clean and slice zucchini, heat oil in skillet, add zucchini, garlic and spices. Stir-fry over medium heat, add 1 tablespoon water and let steam until zucchini is tender.  Toss with parmesan and serve.

*CRUSHING Spices – when using dry spices, to get the best flavor, you should crush them, either by rubbing them in your hand or using a mortar and pestle before adding them to a recipe.

Shopping List:

  • 9 – 12 oz pasta
  • 1 green pepper
  • 1 small onion
  • 1 lb lean ground beef
  • 6 oz tomato paste
  • 3 tomatoes, diced (or 14 oz can diced tomatoes)
  • 15 oz can tomato sauce
  • 1 carrot
  • Parmesan cheese
  • 2 medium zucchini
  • Crusty Italian Bread
  • Sherbet or  Gelato

Also: olive oil, crushed garlic, dried basil, dried oregano, rosemary, salt & pepper

Full Dinner Menu: Black Bean Soup

Believe it or not, they are forecasting snow by the end of the week. From 90 to snow in 4 days. Fall in Colorado. If it does snow it will be quick and brief I’m sure, then back to warm days and fall leaves. But cool weather means soup to me, so that is what I chose for this week’s menu.

This is a recipe from a restaurant in Ouray, CO that was in an old bank. They gave it to me 20 years ago on my honeymoon and I make it all the time. This was my first experience at having to change a recipe meant for 60 into one for 6-8. It’s spicy, so ease up on the cumin and chili powder if needed, you can always add more during the last 30 minutes if needed.

On the board tonight:

  1. Spicy Black Bean Soup
  2. French Bread
  3. Red Grape Salad
  4. Apple wedges & Cheese

Black Bean Soup

  • 4-14 oz cans black beans
  • 2 tsp to 1 tbsp salt
  • 1 ½ tsp crushed garlic
  • 1 bay leaf
  • 2 tsp to 1 tbsp pepper
  • 1 tbsp thyme
  • 1 tbsp chili powder
  • 3 cubes beef bouillon
  • 1 tsp to 2 tsp cumin
  • 3 carrots, shredded
  • ½ onion, minced
  • 2 stalks celery, diced
  • 1 green pepper, minced
  • ½ cup dry red wine (opt)
  • 1 lb chopped smoked sausage
  • 12 cups water

Slow-cooker

Add all ingredients to slow-cooker and cook according to directions (usually 8-10 hours on low). Just before serving, take a potato masher or hand blender and blend/mash slightly to thicken

Red Grape Salad

  • ½ head red leaf lettuce, torn
  • 3 cups seedless red grapes, halved
  • 1 pear, peeled, cored and cubed
  • 4 oz shredded carrots
  • Poppy Seed dressing

Serving bowl

Toss ingredients together, chill and serve

Shopping List:

  • 4-14 oz cans black beans
  • 4 -6 carrots or equivalent shredded carrots
  • ½ onion
  • 2 stalks celery
  • 1 green pepper
  • 4 oz dry red wine (opt)
  • 1 lb smoked sausage
  • ½ head red leaf lettuce
  • 3 cups seedless red grapes
  • 1 pear
  • Poppy Seed dressing
  • French Bread
  • Apple wedges & Cheese

Also: salt, garlic, bay leaf, thyme, chili powder, beef bouillon, cumin, pepper

Dinner Menu: Linguine w/Peppers and Italian Asparagus

It’s the time of year that I begin to crave fresh, light dinners. I’ve tired of stews, hearty soups and the other staples of the mid-winter gloom. As I start to believe spring will arrive again, I want meals that reflect that belief. Lots of fresh veggies, fresh fruits, light sauces and simple, full flavors.

This menu includes items that are plentiful at my local grocery this week. All the peppers are on sale right now, so I use red, yellow. orange and green. Lots of fresh berries, too. And asparagus is everywhere.

On the board tonight:

  1. Linguine w/Garlic & Peppers
  2. Italian Asparagus
  3. Mixed berries & whipped cream

Linguine w/Garlic & Peppers

  • 3 tbsp olive oil
  • 2 tsp crushed garlic
  • ¼ to ½ tsp red pepper flakes
  • 1 green pepper, seeded and thinly sliced
  • 1 red pepper, seeded and thinly sliced
  • 2 oz fresh basil leaves
  • 14 oz can diced tomatoes*
  • salt & pepper to taste
  • 4 oz shredded Romano-Parmesan cheese
  • 9 oz pkg. fresh linguine

saucepan and skillet

In skillet heat oil, add garlic, red pepper flakes, green & red peppers and sauté for 5 minutes on medium heat. Add fresh basil, tomatoes, salt & pepper let simmer while pasta cooks. Cook pasta according to package directions and drain well. Toss with pepper mixture & cheese.

* you can use fresh tomatoes, probably 2 large, but I couldn’t find any decent ones this time of year.

Italian Asparagus

  • 1 bunch (approx. 16 oz) fresh asparagus spears
  • 1 tbsp olive oil
  • 1 tsp oregano, crushed
  • salt & pepper to taste
  • 2 oz shredded Romano/Parmesan

saucepan & steamer

Gently scrub asparagus, cut in half and place in steamer. Add enough water to saucepan to come in the bottom of the steamer. Steam for 5 to 8 minutes, until the stalks are tender. Remove and toss with oil, oregano, salt, pepper & cheese.

Shopping List:

  • 1 green pepper, seeded and thinly sliced
  • 1 red pepper, seeded and thinly sliced
  • 2 oz fresh basil leaves
  • 14 oz can diced tomatoes*
  • 4 oz shredded Romano-parmesan cheese**
  • 9 oz pkg. fresh linguine
  • 1 bunch (approx. 16 oz) fresh asparagus spears
  • 2 oz shredded Romano/Parmesan
  • 16 oz mixed berries
  • Whipped Cream

Friday Recipe Exchange: Fajitas

I know it’s a big party weekend, but since we’ve covered Super Bowl snacks twice already in the recipe exchange, I didn’t see how I could get away with it again this year. For those snacks ideas, click here and here.  All those recipes should give you plenty of ideas for your Super Bowl Party. Obligatory, Go Broncos! 

What are you making for the Super Bowl? Or more importantly, what are you making for the Puppy Bowl? Might I suggest Puppy Chow? Seriously good snack! And who are you picking for the big game?

Now about those fajitas. A while ago, JeffreyW posted about making his own fajita seasoning and I was curious. We emailed back and forth a few times about good recipes and then I was ready to make my own. I can’t imagine I will ever buy taco or fajita seasoning again. It’s easy to make and I can control the salt, which is a plus. And fajitas are a quick, simple dinner for any night of the week.

And then here’s where I went with it:

Steak Fajitas

  • 1 small yellow onion, sliced
  • 1 green pepper, sliced
  • 1 yellow pepper, sliced
  • 1 orange or red pepper
  • 1 to 1 1/2 lbs sirloin or flank steak
  • olive oil and butter
  • 10 flour tortillas

Fajita Seasoning

Mix together the following and store in an airtight container.

  • 2 tbsp chili powder (I used a combo of chili and ancho chili powders)
  • 3 tbsp corn starch
  • 1 tbsp salt
  • 1 tbsp paprika
  • 1 tbsp sugar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp cayenne
  • 1/4 tsp crushed red pepper
  • 1/2 tsp cumin

Slice the sirloin very thin – which is easier to do if it’s slightly frozen,  then coat the meat thoroughly with 1 to 2 tbsp of the seasoning and set aside. I grilled onions in a bit of butter and olive oil until they were nicely caramelized, removed and set aside. I then sautéed the peppers with a bit more olive oil until they were soft, removed and set aside. Then I quickly fried up the beef in olive oil, adding a touch of lime and water at the end to create a bit of a sauce with the fajita seasoning. Served with warmed tortillas.

Easy way to warm tortilla – wrap in foil and leave in a 200 degree oven while prepping dinner.
