Tonight’s featured recipe comes from a friend of mine. He is always experimenting in the kitchen and coming up with delicious dinners. Good are the friends who feed you.

This can also be made in a slow-cooker.

Carne en su Jugo

  • ½ lb bacon, cut in 1-inch pieces
  • 1 lb sirloin steak, sliced thin and then cut in 1-inc pieces (pork works well, too)
  • 1 can (28oz) tomatillos
  • ½ cup cilantro, chopped
  • 2 cloves garlic, chopped
  • salt
  • 2 can pinto beans
  • sour cream for garnish
  • shredded cheese
  • chopped onions for garnish
  • fresh lime juice for garnish
  1. Brown the bacon in a large dutch oven. Add the beef and cook until brown (leave the bacon grease in the pot).
  2. Blend the tomatillos in your food processor and strain well to remove the seeds. Add about a cup of the tomatillo liquid back into the food processor and blend with the cilantro, and garlic.
  3. Add the tomatillo/cilantro/garlic sauce and the rest of the strained tomatillo liquid to the beef and bacon. Add salt to taste.
  4. Stir in pinto beans and bring to a boil. Reduce heat and simmer until beef is tender, about 1 hour.
  5. Ladle into bowls  and garnish with pico de gallo (recipe below),  fresh lime, sour cream.
  6. Serve corn or flour tortillas on the side.

Pico de Gallo

  • chopped onion
  • chopped tomato
  • chopped cilantro
  • splash of lime

Mix together 20 to 30 minutes or more before meal.

Dinner Menu: Chicken Primavera and Fruity Carrot Cake

I love a quick and easy meal that looks and tastes like it took much longer. This menu sure qualifies. Lots of fresh vegetables and if you want to really amp up the flavor, use a flavored linguine, either from a local source (farmer’s markets usually have them) or the gourmet section of the market. A lemon pepper pasta is really good with this. For the vegetables, I’d go with whatever you favor and is fresh, think of the list below as a suggestion. Maybe add mushrooms, artichoke hearts, fresh spring peas.

The carrot cake is not what you’d expect, it is a fruity, light confection with a definite spring touch.  A favorite when I’m taking birthday cake requests.

Meanwhile, on the board tonight:

  1. Chicken Primavera
  2. Carrot Cake

Chicken Primavera

  • 3 boneless chicken breasts, cubed in large pieces
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 to 2 tbsp olive oil
  • 8 oz sliced carrots
  • 8 oz broccoli crowns
  • 1 small yellow summer squash, sliced
  • 2 tsp basil, crushed or ¼ cup fresh basil leaves
  • 1 tsp crushed garlic
  • 2 Roma tomatoes, quartered
  • ¾ cup chicken broth or equivalent
  • ¼ cup white wine
  • 2 oz grated parmesan
  • 9 oz fresh linguine

skillet, large saucepan

Sprinkle salt & pepper over chicken pieces. Heat oil in skillet, add chicken and saute for 5 minutes over medium-high heat, until golden on all sides. Add carrots, broccoli and squash, and stir for 2 minutes. Add basil, garlic, tomatoes. Stir additional 2 minutes. Remove mixture to bowl. Add chicken broth and wine to skillet, deglaze drippings, bring to a boil, reduce heat, add chicken mixture, toss and cover. Reduce heat to low and let simmer while pasta cooks. Bring water to boil in saucepan and cook pasta according to package directions. Drain very well and toss with chicken mixture. Sprinkle with parmesan and serve.

Carrot Cake

  • 1 cup grated carrots
  • 1 cup unbleached flour
  • 2/3 cup white sugar
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 tsp ground cinnamon
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 8 ounce can crushed pineapple
  • 1/4 cup chopped pecans

Frosting:

  • 1 cup confectioners’ sugar*
  • 8 oz cream cheese
  • 3 tbsp butter, melted
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped pecans

2 bowls, 8×8 baking dish, well greased

Preheat oven to 350°

In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Stir in egg, oil, vanilla, pineapple and pecans. Spoon batter into prepared pan.

Bake for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Frosting: In a medium bowl, combine all ingredients, except nuts. Beat until smooth. Spread on cooled cake and garnish with pecans.

* I use half of the sugar because I don’t like it quite that sweet.

Quick Dinner: Vegetable Pasta Toss

And…we’re back. Tonight’s recipe exchange is going to focus on quick and fresh. This is as quick as it gets.

Vegetable Pasta Toss

  • 9 oz pkg linguine
  • 2 tbsp olive oil
  • 1/2 cup diced yellow onion (or 6 green onions, including greens)
  • 1 tsp crushed garlic
  • 8 oz broccoli florets
  • 1 zucchini, cut into 1-inch chunks
  • 1 yellow squash, cut into 1-inch chunks
  • 14 oz can diced tomatoes
  • 1 tsp basil, crushed
  • ½ cup Parmesan cheese, shredded or grated

saucepan, skillet

Cook linguine according to package directions.  While it cooks, heat oil in skillet over medium heat, add onions and saute until translucent. Add  garlic and vegetables, stirring until tender-crisp. Stir in tomatoes, basil and cook until heated through. Drain pasta and add to skillet, tossing well. Top with Parmesan cheese.

Really Quick Dinners: Pasta Rustica

Scrolling through my recipes looking for ones I pulled together by rummaging around the pantry, freezer and refrigerator and came up with this one. Quick, easy and versatile.

Pasta Rustica

  • 9 oz pkg. fresh linguine pasta
  • 4 Roma tomatoes
  • 1 green or red pepper
  • 4 green onions
  • ½ tbsp crushed garlic
  • 2 tsp dried basil
  • ½ cup olive oil
  • Optional: ¼ lb sliced pepperoni or ¼ lb cubed turkey

saucepan, large skillet

Fill saucepan with water and bring to a boil.

Chop tomatoes, pepper and green onions (use greens and whites).  Heat oil in skillet, add onions, garlic and pepper, sauté until onions are golden, careful not to let garlic burn.  Add pepperoni and turkey.  Let simmer on medium to low medium heat.

Add pasta to water while ingredients simmer in skillet.  Cook according to pkg. instructions.

Once pasta is al dente, add tomatoes to skillet, sauté 1-2 minutes. Using a slotted spoon or pasta spoon, transfer pasta to skillet, letting most of the water drain before transferring. There should be just enough water on the pasta to create a nice sauce. If it seems too dry, add a few spoonfuls of the pasta water. Stir and serve with grated Parmesan.



 

Lemon Ricotta Pasta with Chicken and Spinach

Someone asked me if I could post a few recipes that limited the amount of salt, so this week I thought I’d focus on that. I’ll start with lemon. It makes a great substitute for salt, it adds flavor, a bit of bite and enhances the flavors of many things like fish, chicken and pastas. In this recipe, both ricotta and Parmesan are salty enough that additional salt should not be necessary.

Lemon Ricotta Linguine with Chicken and Spinach

  • 1 lb boneless chicken breasts
  • 2 lemons
  • 2 oz fresh basil leaves
  • 2 tbsp olive oil
  • 10-12 oz dry linguine pasta
  • 1 cup reserved pasta water
  • 6 oz baby spinach, washed
  • 12 oz ricotta cheese
  • fresh ground pepper to taste
  • 1/2 cup fresh shredded Parmesan, additional for garnish

shallow dish, large pot, skillet

Place chicken between plastic wrap, pound flat and place in a single layer in a shallow dish. Zest lemons and then juice them. Reserve 2 tbsp of juice, mix the remaining juice with 1 tbsp of oil and basil leaves and pour over chicken, making sure it’s well coated. Cover and marinate for 30 to 60 minutes, turning the chicken halfway through.

Cook pasta according to directions. While it is cooking, heat oil in skillet, remove chicken from the marinade (toss the marinade) and cook chicken breasts over medium high heat until cooked through. Remove from heat, cover and let rest. Alternately you can grill the chicken.

When pasta is al dente, remove 1 cup of water and then drain the pasta and return it to the pot. Over low heat, add lemon juice, ricotta, lemon zest, 1/2 cup of Parmesan and toss. Slowly add a 1/2 cup of pasta water, tossing to make a sauce, until the pasta is coated evenly. Add more water as needed. Slice chicken into strips and add to pasta mixture, then add spinach leaves and toss. Add pepper as desired and serve immediately with more shredded Parmesan. Serves 6

Dinner Menu: Linguine w/Peppers and Italian Asparagus

It’s the time of year that I begin to crave fresh, light dinners. I’ve tired of stews, hearty soups and the other staples of the mid-winter gloom. As I start to believe spring will arrive again, I want meals that reflect that belief. Lots of fresh veggies, fresh fruits, light sauces and simple, full flavors.

This menu includes items that are plentiful at my local grocery this week. All the peppers are on sale right now, so I use red, yellow. orange and green. Lots of fresh berries, too. And asparagus is everywhere.

On the board tonight:

  1. Linguine w/Garlic & Peppers
  2. Italian Asparagus
  3. Mixed berries & whipped cream

Linguine w/Garlic & Peppers

  • 3 tbsp olive oil
  • 2 tsp crushed garlic
  • ¼ to ½ tsp red pepper flakes
  • 1 green pepper, seeded and thinly sliced
  • 1 red pepper, seeded and thinly sliced
  • 2 oz fresh basil leaves
  • 14 oz can diced tomatoes*
  • salt & pepper to taste
  • 4 oz shredded Romano-Parmesan cheese
  • 9 oz pkg. fresh linguine

saucepan and skillet

In skillet heat oil, add garlic, red pepper flakes, green & red peppers and sauté for 5 minutes on medium heat. Add fresh basil, tomatoes, salt & pepper let simmer while pasta cooks. Cook pasta according to package directions and drain well. Toss with pepper mixture & cheese.

* you can use fresh tomatoes, probably 2 large, but I couldn’t find any decent ones this time of year.

Italian Asparagus

  • 1 bunch (approx. 16 oz) fresh asparagus spears
  • 1 tbsp olive oil
  • 1 tsp oregano, crushed
  • salt & pepper to taste
  • 2 oz shredded Romano/Parmesan

saucepan & steamer

Gently scrub asparagus, cut in half and place in steamer. Add enough water to saucepan to come in the bottom of the steamer. Steam for 5 to 8 minutes, until the stalks are tender. Remove and toss with oil, oregano, salt, pepper & cheese.

Shopping List:

  • 1 green pepper, seeded and thinly sliced
  • 1 red pepper, seeded and thinly sliced
  • 2 oz fresh basil leaves
  • 14 oz can diced tomatoes*
  • 4 oz shredded Romano-parmesan cheese**
  • 9 oz pkg. fresh linguine
  • 1 bunch (approx. 16 oz) fresh asparagus spears
  • 2 oz shredded Romano/Parmesan
  • 16 oz mixed berries
  • Whipped Cream

Mmm…shrimp/crab mornay

Mrs J made the call on this one.  I bought some of that fake crab meat and it was about to go past it’s “eat me by” date.  I was thinking crab dip, crab salad, crab whatever.  She sent me down the correct path.  I’ve done this here before, here’s a link to the prior post, the details this time changed just a tad.  I used linguine instead of egg noodles.  This go around I served the pasta on the side rather than under the mornay.  I tossed the linguine with a basil olive oil and a bit of chopped basil and added a sprinkle of lemon pepper.  Next time I’ll chop much more of the basil now that I know it’ll work.

Thursday Night Menu: Asparagus, Peppers and Berries, Oh, My

As the weather warms up I find myself wandering the grocery aisles looking for fresh foods to cook with, not wanting any more root vegetables or winter squash.  It can be challenging because I want fresh – not shipped from a thousand miles fresh.  But I settle for what I can find, which are peppers and asparagus.  The linguine calls for red and green peppers, but red, green, yellow and orange were all on sale, so I’m going with that in mine.   It will make for a nice spring presentation.  Add to that a bunch of tulips for the table and I’m in full Spring mode at my house.  What are you doing to chase away the remnants of winter this weekend?
